Pumpkin Recipes

Today is Halloween, which calls for a few more diabetic-friendly pumpkin recipes.

I don't know about you, but one of the many things I love about this time of year is the abundance of pumpkin recipes. True, you can go to almost any grocery store and buy canned pumpkin year 'round. But autumn just says pumpkin. Pumpkin patches selling all sized pumpkins for jack-'o-lanterns, pumpkin pies for fall holidays...That said, here are six diabetic pumpkin recipes to help get you in the fall-mood, including Pumpkin Risotto and October Bisque. Enjoy!

PUMPKIN SOUP

Yield: 5 servings (1 cup each)

Ingredients

2 teaspoons margarine

3/4 cup chopped onion

One 16-ounce can pumpkin puree (not pumpkin pie filling)

2 cups Homemade Chicken Broth OR canned reduced-sodium chicken broth

2 teaspoons sugar

1/2 teaspoon salt

1/8 teaspoon ground cloves or ground nutmeg

1 cup fat-free milk

Directions

Melt the margarine in a medium saucepan. Saute the onion until softened, about 5 minutes.

Add the pumpkin, broth, sugar, salt, and cloves; stir to mix well. Bring to a boil; reduce the heat and simmer for 15 minutes.

Puree until smooth in a blender or food processor. Return to the saucepan. Add the milk; heat thoroughly but do not boil. Serve at once.

OCTOBER BISQUE

Ingredients

1 large onion, chopped

4 tbsp butter

4 cups chicken broth

1 (28oz) can whole tomatoes, undrained

1 tbsp sugar

2 (16oz) cans pumpkin, or 4 cups pureed pumpkin

2 tbsp chopped, fresh parsley

2 tbsp chopped, fresh chives

Directions

Sauté onion in butter until tender. Add broth and simmer 15 minutes.

Process tomatoes in a blender or food processor until smooth. Add tomato and remaining ingredients to broth. Heat to serve.

PUMPKIN BARS

Ingredients

1/2 cup margarine

1/2 cup fruit sweetener

1/2 cup mashed banana (1 medium banana)

1 egg

1/2 cup canned pumpkin

2 tsp vanilla

1-1/2 cups flour

1 tsp cinnamon

1 tsp each: ginger, allspice, baking soda

1/2 cup raisins

1/2 cup chopped nuts

Topping:

3 Tbsp orange juice concentrate

3 Tbsp fruit sweetener

2 tsp orange rind, freshly grated

1 tsp vanilla

Directions

Combine margarine, fruit sweetener, and mashed banana. Beat in egg, pumpkin & vanilla.

Combine dry ingredients and stir into pumpkin mixture. Add raisins and nuts. Spread into a 9 x 13-inch pan which has been sprayed with a non-stick coating.

Bake 20-25 minutes at 325 degrees, or until firm in the center.

Combine juice concentrate, 3 Tbsp fruit sweetener, orange rind and 1 tsp vanilla. Spread glaze over warm bars.

CINNAMON PUMPKIN TORTE

Ingredients

Nonstick cooking spray

1 (18.25 oz) pkg low-fat yellow cake mix

1/4 cup low-fat margarine, melted

1 egg, slightly beaten (or 1/4 cup egg substitute)

1 (30-ounce) can pumpkin pie mix (with spices already added)

2 eggs, beaten (or 1/2 cup egg substitute)

2/3 cup canned evaporated skim milk

2 Tbsp sugar

1 tsp cinnamon

Directions

Preheat oven to 350F. Coat a 9 x 13-inch cake pan with cooking spray.

Set aside 1 cup of yellow cake mix for topping.

Mix margarine and one egg and add to remaining cake mix. Press slightly dry mixture into bottom of pan to form a crust.

Combine pumpkin pie mix, two eggs, and evaporated skim milk. Pour over prepared bottom crust.

Mix the reserved cake mix, sugar and cinnamon and sprinkle over pumpkin filling.

Bake 40 to 45 minutes.

PUMPKIN RISOTTO

Ingredients

1 pint Chicken or Vegetable Stock

10-1/2 ounces diced cheese pumpkin or other turban squash

2 ounces onion, diced

2 teaspoons minced garlic

5 ounces arborio rice

2 fluid ounces dry white wine

1-1/4 ounces Romano cheese, grated

Directions

Heat the stock in a medium saucepan.

In a separate saucepan, sweat the pumpkin, onions, and garlic in a small amount of the stock until the onions are translucent. Add the rice and cook briefly.

Stirring constantly over medium to low heat, add the remaining hot stock in 3 additions, making sure the rice absorbs each addition of stock before adding the next. When properly cooked, the risotto should have a creamy texture and be firm to the bite. Remove the risotto from the heat and stir in the Romano.

Ingredients

1/2 cup stick butter, softened

1-1/4 cups Equal Spoonful*

3 tablespoons light molasses

1 cup canned pumpkin

1 egg

1-1/2 teaspoons vanilla

1-2/3 cups all-purpose flour

1 teaspoon baking powder

1-1/4 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup mini semi-sweet chocolate chips

* May substitute 30 packets Equal sweetener

Directions

Beat butter, Equal and molasses until well combined. Mix in pumpkin, egg and vanilla until blended. Gradually stir in combined flour, baking powder, spices, baking soda and salt until well blended. Stir in chocolate chips.

Drop by teaspoonfuls onto sprayed baking sheets. Bake in preheated 350F oven 11 to 13 minutes or until light golden brown. Remove from baking sheet and cool completely on wire rack. Store in airtight containers at room temperature.

It's the Great Pumpkin!

Tuesday is usually reserved for Taco Tuesday. But since today is Halloween, I wanted to post a few more diabetic-friendly pumpkin recipes.

I don't know about you, but one of the many things I love about this time of year is the abundance of pumpkin recipes. True, you can go to almost any grocery store and buy canned pumpkin year 'round. But autumn just says pumpkin. Pumpkin patches selling all sized pumpkins for jack-'o-lanterns, pumpkin pies for fall holidays...That said, here are six diabetic pumpkin recipes to help get you in the fall-mood, including Pumpkin Risotto and October Bisque. Cookies

Most of us love an occasional snack, including cookies. As these recipes show, cookies are not necessarily off-limits for diabetics. Check out the Citrus Angel Bite Cookies, the Chocolate Chip Fudgie Cups, or any of the other cookies in today's post. Enjoy!

CINNAMON GINGER COOKIES

Makes: 30 Cookies

Ingredients

1/4 cup brown sugar

3 tablespoon margarine, melted

2 tablespoon molasses

2 tablespoon 2% yogurt

1 teaspoon vanilla

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon ginger

1/2 teaspoon cinnamon

Pinch nutmeg

1-1/2 teaspoon brown sugar

Directions

Preheat the oven to 350 degrees F. Spray a baking sheet with nonstick vegetable spray.

In bowl, combine 1/4 cup brown sugar, margarine, molasses, yogurt and vanilla until well mixed.

Combine flour, baking soda, ginger, cinnamon and nutmeg; stir into bowl just until combined.

Using teaspoon, form dough into small balls and baking on baking sheet. Press flat with fork; sprinkle with 1-1/2 teaspoon brown sugar. Bake for 10 to 12 minutes.

1/2 teaspoon ground ginger

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup mini semi-sweet chocolate chips

CITRUS ANGEL BITE COOKIES

Ingredients

Angel Bites:

5 egg whites

1/3 cup SPLENDA No Calorie Sweetener, Granulated

1 1/2 teaspoons vanilla extract

1 pinch salt

Citrus Filling:

1/2 cup fresh orange juice

1/4 cup fresh lemon juice

4 teaspoons cornstarch

3 tablespoons Splenda No Calorie Sweetener, Granulated

1 egg yolk

Directions

Preheat oven to 350 degrees F. Lightly oil a 13x11 inch baking sheet. Set aside.

Make Angel Bites: Place egg whites in a medium mixing bowl. Whip on high speed using an electric mixer or wire whisk until frothy.

Add Splenda Granulated Sweetener, vanilla and salt. Mix on high speed until medium-stiff peaks form (approx. 20-30 seconds with an electric mixer).

Spoon rounded tablespoons of egg white mixture onto prepared baking sheet. Bake in preheated 350 degree F oven 10-15 minutes or until golden brown. Remove from pan. Cool.

Make filling: Blend together Splenda Granulated Sweetener and egg yolk in a small mixing bowl. Stir well. Add juice to egg yolk mixture. Mix thoroughly. Add cornstarch. Stir well. Pour into a small saucepan. Cook over medium heat, stirring frequently, until thickened (approx. 2 minutes). Chill until ready to use.

Assemble Angel Bites: Just before serving, sandwich Angel Bites with filling. Place filling on the bottom of one Angel Bite and top with another so that the bottoms of the Angel Bites are facing each other and the filling is sandwiched between them. Repeat with remaining Angel Bites.

Garnish Angel Bites with a dollop of whipped cream, some orange zest and a sprig of mint.

Note: If egg whites start to separate, whisk them back together using a wire whisk. Serving size is 3 assembled angel bites.

1 teaspoon baking soda

1 teaspoon salt

1 cup (2 sticks) butter, softened

1/3 cup Splenda Sugar Blend for Baking

3/4 cup packed brown sugar

1 teaspoon vanilla extract

2 large eggs

2 cups (12-ounce package) Nestle Toll House Semi-Sweet Chocolate Morsels

Directions

Preheat oven to 375F.

Combine flour, baking soda and salt in small bowl. Beat butter, sugar blend, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels.

Drop by rounded tablespoon onto ungreased baking sheets.

Bake 9 to 11 minutes or until golden brown. Cool on baking sheets 2 minutes; remove to wire racks to cool completely.

ALMOND BISCOTTI

Servings: 32

Ingredients

1/4 cup finely chopped almonds

1/2 cup sugar

2 tablespoons margarine

4 egg whites, lightly beaten

2 teaspoons almond extract

2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

Directions

Preheat oven to 375 degree F. Place almonds in a small baking pan. Bake 7 to 8 minutes until golden brown (watch carefully to avoid burning). Set aside.

Beat sugar and margarine in medium bowl with electric mixer until smooth. Add egg whites and almond extract; mix well. Combine flour, baking powder and salt in large bowl; mix well. Stir egg white mixture and almonds into flour mixture until well blended.

Spray two 9x5-inch loaf pans with non-stick cooking spray. Evenly divide dough between prepared pans. Spread dough evenly over bottoms of pans with wet fingertips. Bake 15 minutes or until knife inserted into centers comes out clean.

Chocolate Chip Dough:

1/3 cup stick butter, softened

1 egg

1 teaspoon vanilla

1/3 cup Equal Spoonful*

Directions

For Chocolate Chip Dough, beat 1/3 cup butter with electric mixer until fluffy. Beat in 1 egg and 1 teaspoon vanilla until blended. Mix in 1/3 cup Equal* and brown sugar until combined. Combine 1 cup flour, baking soda, and 1/4 teaspoon salt. Mix into butter mixture.

Stir in chocolate chips. Form dough into circle about 1/2-inch thick. Wrap tightly in plastic wrap and freeze while preparing Fudge Nut Filling.

For Fudge Nut Filling, combine 1 cup Equal**, 3/4 cup flour, cocoa, nuts, baking powder and 1/4 teaspoon salt.

Beat applesauce, 6 tablespoons butter, 2 eggs and 1 teaspoon vanilla until blended. Stir in combined flour mixture until well blended.

Remove Chocolate Chip Dough from freezer. Spread approximately 1 rounded tablespoonful of dough in each of 24 mini-muffin pans. Fill each with Fudge Nut Filling to top of cup.

Bake in preheated 350F oven 15 to 18 minutes or until wooden pick inserted in center comes out clean. Let cool in muffin pans about 5 minutes. Remove from pans and cool completely on wire racks.

Store in airtight containers at room temperature.

Cookies

I usually don't post on Sundays, but since we're close to Christmas, I decided to add a Sunday post here. And since cookies are wonderful for gift-giving (as well as bringing to cookie exchanges and work for sharing), I wanted to make sure to post cookies that everyone - including diabetics - can enjoy. Here are six cookie recipes, including Pumpkin Polka Dot Cookies and Chocolate Chip Meringue Crisps. Enjoy!

CINNAMON GINGER SPSICE COOKIES

Yield: 30 servings

Ingredients

6 tablespoons vegetable shortening

6 tablespoons margarine

1 cup Splenda No Calorie Sweetener, Granulated

1 large egg

1/4 cup molasses

2 cups sifted all-purpose flour

3/4 teaspoon ground ginger

1 teaspoon cinnamon

1/2 teaspoon ground cloves

Directions

Mix together shortening, margarine, Splenda Granulated Sweetener, egg and molasses in a large mixing bowl.

Sift dry ingredients together and add to shortening mixture. Mix thoroughly.

Chill dough in refrigerator until firm (approximately 2 hours).

Preheat oven to 350 degrees F.

Form dough into 30 balls, approximately 1 level tablespoons each. Place cookies on ungreased cookie sheet and pat down gently with fork making a criss-cross pattern.

Bake cookies in the center of the preheated 350 degrees F oven for 10-12 minutes. Do not overbake. Cookies will look chewy when they come out but will become crisp. Cool cookies on wire cooling rack.

1/2 cup chopped walnuts

2 egg whites

Preheat oven to 300 degrees F.

Bake walnuts in a shallow pan, stirring occasionally, 5 minutes or until toasted. Set aside.

Beat egg whites and vanilla at high speed with an electric mixer until foamy.

Add Splenda Sugar Blend, 1 tablespoon at a time, beating until stiff peaks form; stir in walnuts and chocolate morsels.

Spoon rounded teaspoons of mixture on baking sheets lined with parchment paper.

Bake 15 minutes. Drop oven temperature to 200 degrees F.

Bake for one hour and 45 minutes. Cool slightly on cookie sheet. Remove to wire racks to cool completely. Store in an airtight tin.

It's the Great Pumpkin!

I don't know about you, but one of the many things I love about this time of year is the abundance of pumpkin recipes. True, you can go to almost any grocery store and buy canned pumpkin year 'round. But autumn just says pumpkin. Pumpkin patches selling all sized pumpkins for jack-'o-lanterns, pumpkin pies for fall holidays...That said, here are six diabetic pumpkin recipes to help get you in the fall-mood, including Pumpkin Risotto and October Bisque. PUMPKIN SOUP

Yield: 5 servings (1 cup each)

2 teaspoons margarine

3/4 cup chopped onion

One 16-ounce can pumpkin puree (not pumpkin pie filling)

2 cups Homemade Chicken Broth OR canned reduced-sodium chicken broth

1/8 teaspoon ground cloves or ground nutmeg

1 cup fat-free milk

Directions

Melt the margarine in a medium saucepan. Saute the onion until softened, about 5 minutes.

Add the pumpkin, broth, sugar, salt, and cloves; stir to mix well. Bring to a boil; reduce the heat and simmer for 15 minutes.

Puree until smooth in a blender or food processor. Return to the saucepan. Add the milk; heat thoroughly but do not boil. Serve at once.

Combine margarine, fruit sweetener, and mashed banana. Beat in egg, pumpkin & vanilla.

Combine dry ingredients and stir into pumpkin mixture. Add raisins and nuts. Spread into a 9 x 13-inch pan which has been sprayed with a non-stick coating.

Bake 20-25 minutes at 325 degrees, or until firm in the center.

Combine juice concentrate, 3 Tbsp fruit sweetener, orange rind and 1 tsp vanilla. Spread glaze over warm bars.

Nonstick cooking spray

1 (18.25 oz) pkg low-fat yellow cake mix

1/4 cup low-fat margarine, melted

1 egg, slightly beaten (or 1/4 cup egg substitute)

1 (30-ounce) can pumpkin pie mix (with spices already added)

2 eggs, beaten (or 1/2 cup egg substitute)

2/3 cup canned evaporated skim milk

2 Tbsp sugar

1 tsp cinnamon

Directions

Preheat oven to 350F. Coat a 9 x 13-inch cake pan with cooking spray.

Set aside 1 cup of yellow cake mix for topping.

Mix margarine and one egg and add to remaining cake mix. Press slightly dry mixture into bottom of pan to form a crust.

Combine pumpkin pie mix, two eggs, and evaporated skim milk. Pour over prepared bottom crust.

Mix the reserved cake mix, sugar and cinnamon and sprinkle over pumpkin filling.

Bake 40 to 45 minutes.

1 pint Chicken or Vegetable Stock

10-1/2 ounces diced cheese pumpkin or other turban squash

2 ounces onion, diced

2 teaspoons minced garlic

5 ounces arborio rice

2 fluid ounces dry white wine

1-1/4 ounces Romano cheese, grated

Directions

Heat the stock in a medium saucepan.

In a separate saucepan, sweat the pumpkin, onions, and garlic in a small amount of the stock until the onions are translucent. Add the rice and cook briefly.

Stirring constantly over medium to low heat, add the remaining hot stock in 3 additions, making sure the rice absorbs each addition of stock before adding the next. When properly cooked, the risotto should have a creamy texture and be firm to the bite. Remove the risotto from the heat and stir in the Romano.

Desserts

Is there anyone who doesn't occasionally want something snacky? Here are six yummy dessert recipes for the holidays, or any time that the snack attack hits, including Double Chocolate Brownies and Nectarine and Berry Tart. Enjoy!

BREAD PUDDING WITH RAISINS

1/2 cup raisins

2 cups fat-free milk

Set the filled baking dish in a shallow pan on the middle rack of the oven. Pour hot water into the shallow pan to a depth of 1 inch around the baking dish. This creates a water bath to cook the pudding slowly.

Bake 45 to 55 minutes, or until a knife inserted in the pudding comes out clean. Remove the pan from the water bath and serve warm or chilled.

Toss nectarines and berries with lemon juice in large bowl. Sprinkle fruit with combined cornstarch, Equal, lemon peel and allspice. Toss to coat.

Arrange fruit mixture over pastry, leaving 2-inch border around edge of pastry. Bring edge of pastry toward center, overlapping as necessary.

Bake tart in preheated 425F oven 35 to 40 minutes or until crust is golden and fruit is tender.

Cool on wire rack. Serve warm or at room temperature.

Combine Equal®, cornstarch, cocoa and salt in medium saucepan. Stir in milk. Heat to boiling over medium-high heat, whisking constantly. Boil and stir until thickened, about 1 minute.

Beat eggs in small bowl; whisk about 1 cup chocolate mixture into eggs. Whisk egg mixture into chocolate mixture in saucepan. Cook over very low heat, whisking constantly, 30 to 60 seconds.

Remove from heat. Stir in vanilla.

It's the Great Pumpkin!

I don't know about you, but one of the many things I love about this time of year is the abundance of pumpkin recipes. True, you can go to almost any grocery store and buy canned pumpkin year 'round. But autumn just says pumpkin. Pumpkin patches selling all sized pumpkins for jack-'o-lanterns, pumpkin pies for fall holidays...That said, here are six diabetic pumpkin recipes to help get you in the fall-mood, including Pumpkin Risotto and October Bisque. PUMPKIN SOUP

Bake 20-25 minutes at 325 degrees, or until firm in the center.

Combine juice concentrate, 3 Tbsp fruit sweetener, orange rind and 1 tsp vanilla. Spread glaze over warm bars.

1 (18.25 oz) pkg low-fat yellow cake mix

1/4 cup low-fat margarine, melted

1 egg, slightly beaten (or 1/4 cup egg substitute)

1 (30-ounce) can pumpkin pie mix (with spices already added)

2 eggs, beaten (or 1/2 cup egg substitute)

2/3 cup canned evaporated skim milk

Set aside 1 cup of yellow cake mix for topping.

1 pint Chicken or Vegetable Stock

10-1/2 ounces diced cheese pumpkin or other turban squash

2 ounces onion, diced

2 teaspoons minced garlic

5 ounces arborio rice

2 fluid ounces dry white wine

Directions

Heat the stock in a medium saucepan.

In a separate saucepan, sweat the pumpkin, onions, and garlic in a small amount of the stock until the onions are translucent. Add the rice and cook briefly.

Stirring constantly over medium to low heat, add the remaining hot stock in 3 additions, making sure the rice absorbs each addition of stock before adding the next. When properly cooked, the risotto should have a creamy texture and be firm to the bite. Remove the risotto from the heat and stir in the Romano.

Cookies!

I usually don't post on Sundays, but since we're close to Christmas, I decided to add a Sunday post here. And since cookies are wonderful for gift-giving (as well as bringing to cookie exchanges and work for sharing), I wanted to make sure to post cookies that everyone - including diabetics - can enjoy. Here are six cookie recipes, including Pumpkin Polka Dot Cookies and Chocolate Chip Meringue Crisps. Enjoy!

CHOCOLATE GINGERBREAD COOKIES

Who doesn’t love chocolate or gingerbread? This yummy recipe comes from Diabetes Self-Management and makes about 2 dozen cookies.

Ingredients

2 1/4 cups all-purpose flour

3 tablespoons unsweetened cocoa powder

2 1/2 teaspoons ground ginger

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/8 teaspoon salt

1/8 teaspoon finely ground black pepper

1/2 cup (1 stick) butter, softened

1/2 cup packed light brown sugar

1/4 cup granulated sugar

1 tablespoon shortening

4 squares (1 ounce each) semisweet chocolate, melted and cooled

2 tablespoons molasses

1 egg

White decorating icing (optional)

Directions

Combine flour, cocoa, ginger, baking soda, cinnamon, salt, and pepper in medium bowl. Beat butter, brown sugar, granulated sugar, and shortening in large bowl with electric mixer at medium speed until creamy. Add chocolate; beat until blended. Add molasses and egg; beat until well blended.

Gradually add flour mixture, beating until well blended. Divide dough in half. Shape each half into disc; wrap each disc tightly in plastic wrap. Refrigerate at least 1 hour.

Preheat oven to 350°F. Roll out 1 disc of dough between sheets of plastic wrap to 1/4-inch thickness. Cut out shapes with 5-inch cookie cutters; place cutouts on ungreased cookie sheets. Refrigerate at least 15 minutes. Repeat with remaining dough.

Bake 8 to 10 minutes or until cookies are set. Cool on cookie sheets 5 minutes. Remove to wire racks to cool completely. Decorate with icing, if desired.

Chewy Chocolate Gingerbread Drops: Decrease flour to 1 3/4 cups. Shape 1 1/2 teaspoonfuls of dough into balls. Place on ungreased cookie sheets. Flatten balls slightly. Do not refrigerate before baking. Bake as directed. Makes about 4 1/2 dozen cookies.

6 tablespoons margarine

1 cup Splenda No Calorie Sweetener, Granulated

1 large egg

1/4 cup molasses

2 cups sifted all-purpose flour

3/4 teaspoon ground ginger

1 teaspoon cinnamon

1/2 teaspoon ground cloves

Directions

Mix together shortening, margarine, Splenda Granulated Sweetener, egg and molasses in a large mixing bowl.

Sift dry ingredients together and add to shortening mixture. Mix thoroughly.

Chill dough in refrigerator until firm (approximately 2 hours).

Preheat oven to 350 degrees F.

Form dough into 30 balls, approximately 1 level tablespoons each. Place cookies on ungreased cookie sheet and pat down gently with fork making a criss-cross pattern.

Bake cookies in the center of the preheated 350 degrees F oven for 10-12 minutes. Do not overbake. Cookies will look chewy when they come out but will become crisp. Cool cookies on wire cooling rack.

6 tablespoons stick butter, softened

2 eggs

1 teaspoon vanilla

* May substitute 8 packets Equal sweetener

** May substitute 24 packets Equal sweetener

Directions

For Chocolate Chip Dough, beat 1/3 cup butter with electric mixer until fluffy. Beat in 1 egg and 1 teaspoon vanilla until blended. Mix in 1/3 cup Equal* and brown sugar until combined.

Combine 1 cup flour, baking soda, and 1/4 teaspoon salt. Mix into butter mixture.

Stir in chocolate chips. Form dough into circle about 1/2-inch thick. Wrap tightly in plastic wrap and freeze while preparing Fudge Nut Filling.

For Fudge Nut Filling, combine 1 cup Equal**, 3/4 cup flour, cocoa, nuts, baking powder and 1/4 teaspoon salt. Beat applesauce, 6 tablespoons butter, 2 eggs and 1 teaspoon vanilla until blended. Stir in combined flour mixture until well blended.

Remove Chocolate Chip Dough from freezer. Spread approximately 1 rounded tablespoonful of dough in each of 24 mini-muffin pans. Fill each with Fudge Nut Filling to top of cup.

Bake in preheated 350F oven 15 to 18 minutes or until wooden pick inserted in center comes out clean. Let cool in muffin pans about 5 minutes. Remove from pans and cool completely on wire racks.

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon salt

2-1/4 cups quick oats, uncooked

1/2 cup dried cherries

1/2 cup chopped dark chocolate

Cooking spray

*May also substitute with 30 packets Equal Sweetener

Directions

Combine Equal, butter, brown sugar, egg whites, applesauce, milk and vanilla.

Mix with electric mixer until well blended. Stir in combined flour, baking soda, cinnamon, ginger and salt.

Gradually mix in oats, cherries and chocolate until well combined.

Drop by tablespoonfuls onto lightly sprayed baking sheets.

Bake in a preheated 350F oven for 9 to 10 minutes, or until light golden in color.

Remove from baking sheet and cool completely on wire rack.

Cookies

It's been a while since I've posted any articles. This one, from The Diabetic News, discusses medications that are considered high risk, especially for seniors.

A recent study showed that in a group of 287 seniors over the age of 65 who fell “while hospitalized at an urban academic hospital, 62 percent of falls occurred in patients in whom high risk medications had been administered within the 24 hours before the fall.”

1 cup raisins

1/4 cup butter or margarine

1 cup sweet potatoes, cooked and mashed

1 egg

1 teaspoon vanilla

2 cups whole-wheat flour

1/4 teaspoon allspice

1/2 teaspoon salt

1/2 teaspoon nutmeg

1/2 teaspoon baking soda

1 teaspoon baking powder

1/4 cup walnuts, chopped

Directions

Preheat oven to 350 degrees. Soak raisins in hot water to cover for 5 minutes, then drain.

Cream margarine, then add sweet potatoes, egg, and vanilla; beat until creamy.

Mix flour, allspice, salt, nutmeg, baking soda, baking powder, and cinnamon. Add to creamed mixture and mix well.

Add raisins, nuts, and bran. Drop onto cookie sheet that has been sprayed with nonstick cooking spray. Bake for 12 minutes or until done.

Nestle Toll House Butter-scotch Flavored Morsels

Directions

Preheat oven to 375F.

Combine flour, baking soda, cinnamon and salt in small bowl. Beat butter, sugar blend, brown sugar, eggs and vanilla extract in large mixer bowl.

Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheets.

Bake 7 to 8 minutes for chewy cookies, 9 to 10 minutes for crisp cookies. Cool on baking sheets 2 minutes; remove to wire racks to cool completely.

1/4 cup margarine, softened

1 cup creamy style peanut butter

1/4 cup egg substitute

2 tablespoons honey

1/2 teaspoon vanilla extract

1 cup Splenda Granular

1-1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

Directions

Heat oven to 350F.

In a large bowl, beat margarine and peanut butter with an electric mixer until creamy, approximately 1 minute.

Add egg substitute, honey and vanilla extract. Beat on high speed for approximately 1-1/2 minutes.

Add Splenda and beat on medium speed until well blended, approximately 30 seconds.

In small bowl, combine flour, baking soda and salt. Slowly add flour mixture to peanut butter mixture, beating on low speed until well blended, about 1 1/2 minutes. Mixture may be crumbly.

Roll level teaspoons of dough into balls and drop onto a lined sheet pan, about 2 inches apart. Flatten each ball with a fork, pressing a crisscross pattern into each cookie. Bake 7-9 minutes or until light brown around the edges. Cool on wire rack.

2 tablespoons grated fresh, or finely chopped, dried lemon rind

1 teaspoon lemon flavoring

1 cup all-purpose flour

1 cup rolled oats

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1-1/2 cup crispy rice cereal

Directions

Place oil and brown sugar in a mixer bowl in a mixer bowl and mix at medium speed until creamy.

Add egg whites, lemon juice, rind and flavoring, and mix at medium speed until well blended.

Stir flour, oatmeal, baking powder, and baking soda together to blend well; add to creamy mixture while beating at medium speed. Stir in cereal.

Drop by the tablespoonful onto cookie sheets left ungreased, or lined with aluminum foil.

Bake at 350F for 8 to 10 minutes, or until cookies are lightly browned.

Remove cookies to a wire rack and cool.
