SPICY PUMPKIN SOUP WITH GREEN CHILE SWIRL

Ingredients
1 can (4 ounces) diced mild green chiles
1/4 cup light sour cream, plus additional for garnish
1/4 cup packed fresh cilantro leaves
1 can (15 ounces) solid-pack pumpkin
1 can (about 14 ounces) fat-free reduced-sodium chicken or vegetable broth
1/2 cup water
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1/8 teaspoon ground red pepper (optional)
Directions
Combine chiles, 1/4 cup sour cream, and cilantro in food processor or blender; process until smooth.*
Combine pumpkin, broth, water, cumin, chili powder, garlic powder, and red pepper, if desired, in medium saucepan; stir in 1/4 cup green chile mixture. Bring to a boil; reduce heat to medium. Simmer, uncovered, 5 minutes, stirring occasionally.
Ladle soup into four serving bowls; top each serving with small dollops of remaining green chile mixture and additional sour cream, if desired. Run tip of spoon through dollops to swirl.
*Note. Or omit food processor step by adding green chiles directly to soup. Finely chop cilantro and combine with sour cream. Dollop soup with sour cream-cilantro mixture as directed.

Ingredients
3 tbsp margarine
1/4 tsp cinnamon
1/4 cup sugar
3 large sweet potatoes, cooked, mash
1/4 tsp salt
1 cup skim milk
1 egg yolk
3 egg whites, beaten stiff
3 tbsp lemon juice
1 (9-inch) unbaked pie shell
1 tsp lemon peel
Directions
Use about 1-1/2 pounds sweet potatoes.
Heat oven to 350F.
Beat together margarine, sugar, and salt. Add egg yolk, lemon juice, lemon peel and cinnamon.
Stir in sweet potatoes and milk. Mix well.
Fold in egg whites; pour into pie shell.
Bake for 40 to 50 minutes or until knife inserted in center comes out clean.
To reduce saturated fat, use a homemade pie shell made with vegetable oil.

1-1/2 to 2 pounds chicken leg quarters
3 tablespoons olive oil, divided

1 small onion, diced
2 cloves garlic, minced
1/4 cup white wine or water

2 tablespoons capers, rinsed
2 tablespoons red wine vinegar
1 teaspoon sugar
2 tablespoons parsley, minced
Directions
In large skillet over medium high-heat, warm 2 tablespoons olive oil. Season leg quarters with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Add leg quarters to pan, skin-side down. Brown chicken, turning once, 8 to 10 minutes per side. Remove chicken to plate and drain off all but 2 tablespoons oil.
Add eggplant to hot pan and cook, stirring, 5 minutes. Add remaining tablespoon olive oil, along with zucchini, onion and garlic. Cook 5 minutes, stirring occasionally.
Raise heat to high and add white wine to pan, stirring to scrape up any browned bits. Add all other ingredients, except parsley, and place chicken legs in mixture. Bring to boil, reduce heat to medium-low, cover and simmer for 35 to 40 minutes or until cooked through or until an instant read thermometer reads 170F.
To serve, place some of the eggplant ragout onto plates, top with a leg quarter and sprinkle with parsley.

1 pound Ground Beef
1/4 cup soft whole wheat bread crumbs
1 large egg, slightly beaten
4 tablespoons chopped fresh cilantro, divided

1 teaspoon ground chipotle chili powder, divided
1/2 teaspoon salt
1 can (15 ounces) tomato sauce
Chopped fresh cilantro (optional)
Directions
Combine Ground Beef, bread crumbs, egg, 2 tablespoons cilantro, 1/2 teaspoon chipotle chili powder and 1/2 teaspoon salt in large bowl, mixing lightly but thoroughly. Shape into 24 one-inch meatballs. Heat large nonstick skillet over medium heat until hot. Place meatballs in skillet; cook 8 minutes or until browned on all sides.
Add tomato sauce, remaining 2 tablespoons cilantro and remaining 1/2 teaspoon chipotle chili powder; bring to a boil. Reduce heat; cover and simmer 8 to 10 minutes, stirring once.
Serve meatballs on skewers or on platter with toothpicks. Sprinkle with cilantro, if desired.

Meatless Monday
Here's to another Meatless Monday. Any of these six recipes would be a welcome addition to your Thanksgiving meal, including Green Beans with Poppy Seed Dressing and Fresh Fruit Clafouti. Enjoy!
APPLE STUFFED ACORN SQUASH

Ingredients
1/4 cup raisins
2 acorn squash (about 4 inches in diameter)
Butter-flavored cooking spray
2 tablespoons sucralose no-calorie sweetener
1/4 teaspoon ground cinnamon
2 medium Fuji apples
2 tablespoons light butter
Directions
Cover raisins with warm water and soak 20 minutes. Preheat oven to 375°F.
Cut squash into quarters; remove seeds. Place squash on baking sheet. Spray inside of each squash quarter with cooking spray. Combine sweetener and cinnamon in small bowl; sprinkle squash quarters with half of cinnamon mixture. Bake 10 minutes.
Meanwhile, cut apples into quarters; remove cores. Chop apples into 1/2-inch pieces. Drain raisins. Melt butter in medium saucepan over medium heat. Add apples, raisins, and remaining cinnamon mixture; cook and stir 1 minute. Top partially baked squash with equal amounts apple mixture. Bake 30 to 35 minutes or until apples and squash are tender. Serve warm.
Yield: 8 servings.

Directions
To prepare dressing: Heat a small dry skillet over medium-low heat.
Add poppy seeds and toast, stirring, until fragrant, about 1 minute.
Transfer to a small bowl (or jar) and let cool. Add oil, vinegar, mustard, honey, shallot, salt and pepper; whisk (or shake) until blended.
To prepare beans: Cook beans in a large pot of boiling water until just tender, 5 to 8 minutes. Drain.

Directions

Combine the lemon juice, oil, salt, and pepper. Add to the salad; toss lightly to coat the ingredients. Refrigerate for at least 8 hours before serving.

3/4 cup all-purpose flour
1/3 cup Equal Spoonful or Granulated*

Filling Ingredients:
2 eggs

1/2 cup lemon juice

1 tablespoon grated lemon peel
*May substitute 8 packets Equal sweetener

Directions
For Crust, combine flour, 1/3 cup Equal and salt in medium bowl.
Cut in 6 tablespoons butter with pastry blender until mixture resembles coarse crumbs.
Sprinkle with 1 teaspoon lemon peel and vanilla. Mix with hands to form dough.
Press dough evenly on bottom and 1/4-inch up sides of 8-inch square baking pan.
Bake in preheated 350F oven 8 to 10 minutes or until set. Cool on wire rack.
For Filling, beat eggs and 3/4 cup Equal. Mix in lemon juice, 4 tablespoons melted butter and 1 tablespoon lemon peel. Pour mixture into baked pastry.
Bake about 15 minutes or until filling is set.
Cool completely on wire rack. Cut into squares.
Store in airtight container in refrigerator.

Filling Ingredients:
2 eggs
3/4 cup Equal Spoonful or Granulated**
1/2 cup lemon juice
4 tablespoons stick butter, melted
1 tablespoon grated lemon peel
*May substitute 8 packets Equal sweetener

Directions
For Crust, combine flour, 1/3 cup Equal and salt in medium bowl.
Cut in 6 tablespoons butter with pastry blender until mixture resembles coarse crumbs.
Sprinkle with 1 teaspoon lemon peel and vanilla. Mix with hands to form dough.
Press dough evenly on bottom and 1/4-inch up sides of 8-inch square baking pan.
Bake in preheated 350F oven 8 to 10 minutes or until set. Cool on wire rack.
For Filling, beat eggs and 3/4 cup Equal. Mix in lemon juice, 4 tablespoons melted butter and 1 tablespoon lemon peel. Pour mixture into baked pastry.
Bake about 15 minutes or until filling is set.
Cool completely on wire rack. Cut into squares.
Store in airtight container in refrigerator.

CHICKEN MARSALA

1/4 cup flour
Dash white pepper
Dash oregano
Dash basil
1-1/4 pound boneless chicken breasts
1 tablespoon safflower oil
1 tablespoon butter or margarine
1/2 pound mushrooms, sliced
1 cup marsala wine or dry sherry
Directions
Mix the flour, white pepper, oregano, and basil together on a plate.
Wash and dry the chicken breasts and coat each with the flour mixture. Reserve any leftover flour.
Heat the oil and butter in a frying pan. Add the chicken breasts and saute gently until brown and tender on both sides, about 15 minutes. Remove the breasts to a dish.
Add the mushrooms and 1/4 cup of the wine; cook for about 5 minutes over low heat. Scrape the bottom of pan to loosen any flour. Stir in any reserved flour and the remaining wine.
Simmer until the mixture thickens, stirring constantly. Slip the cooked breasts into the sauce. Cook gently for about 5 minutes or more.

Meatless Monday
It's time for another Meatless Monday.
If you've ever wondered if you could actually become a vegetarian, trying out a meatless day one day a week might be the easiest way to try it out. It's healthy, and as easy to find variety as, say, making sure your diet is great for diabetics. Both food choices (diabetic and vegetarian) take a little forethought, but after a while, it's easy. (Of course, if you're already a vegetarian, you probably already know this!)

LEMON BASIL PESTO WITH FRESH VEGETABLES

Add lemon zest and whirl to blend.
Cover and refrigerate up to 24 hours. Makes 1 cup pesto.
To serve, scoop pesto into serving bowl.
Set bowl in center of a plate and arrange pepper strips and tomatoes around it.
Provide toothpicks so tomatoes can be neatly dipped.

It's another Meatless Monday. For those of us who are vegetarian, we know that meatless food can be healthy and yummy. And for everyone else, here's a great way to try going meatless one day a week. Directions
Preheat the oven to 350 degrees F. Prepare a 9x5-inch loaf pan with nonstick pan spray.
Combine the flours, sugar, baking powder, salt, and baking soda in a large bowl. Stir in zucchini, walnuts, lemon zest, and cinnamon.
Combine the milk, oil, and eggs; add to the dry ingredients and mix until the dry ingredients are moistened. Spread evenly in the prepared pan.
Bake 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
Let the bread stand in the pan for 5 minutes; turn the loaf out onto a wire cooling rack. When cool, cut in 18 slices.

3/4 cup dried apricots, divided
1/3 cup water

In a blender, add the cooled apricot mixture and puree, about 1 minute.

Spread in the prepared pan and bake until golden brown and edges begin to crust, 18-20 minutes.

1 can (4 ounces) diced mild green chiles
1/4 cup light sour cream, plus additional for garnish

Cook chicken over medium to medium-high heat until hot. Cook chicken over medium to medium-high heat until browned and no longer pink in center, 3 to 5 minutes. Remove chicken from skillet.
Melt margarine in skillet; stir in 2 tablespoons flour and cook over medium heat 1 to 2 minutes. Stir in chicken broth, wine, and lemon juice; heat to boiling. Boil, stirring constantly, until slightly thickened, 1 to 2 minutes. Reduce heat and simmer, uncovered, until thickened to a medium sauce consistency, about 15 minutes more. 2 tablespoons chicken stock or water
1/4 cup 5% ricotta cheese

Preheat oven to 425 degrees F. Spray a baking sheet with vegetable pan spray.
Wipe mushrooms clean and gently remove stems; reserve for another purpose. Put caps on baking sheet.
Put basil, olive oil, pine nuts, Parmesan and garlic in food processor; process until finely chopped, scraping down sides of bowl once. Add stock through the feed tube and process until smooth. Add ricotta and process until mixed.
Divide mixture evenly among mushroom caps. Bake for 10 to 15 minutes or until hot.

Filling Ingredients:
2 eggs
3/4 cup Equal Spoonful or Granulated**
1/2 cup lemon juice
4 tablespoons stick butter, melted
1 tablespoon grated lemon peel
*May substitute 8 packets Equal sweetener
** May substitute 18 packets Equal sweetener
Directions
For Crust, combine flour, 1/3 cup Equal and salt in medium bowl.
Cut in 6 tablespoons butter with pastry blender until mixture resembles coarse crumbs.
Sprinkle with 1 teaspoon lemon peel and vanilla. Mix with hands to form dough.
Press dough evenly on bottom and 1/4-inch up sides of 8-inch square baking pan.
Bake in preheated 350F oven 8 to 10 minutes or until set. Cool on wire rack.
For Filling, beat eggs and 3/4 cup Equal. Mix in lemon juice, 4 tablespoons melted butter and 1 tablespoon lemon peel. Pour mixture into baked pastry.
Bake about 15 minutes or until filling is set.
Cool completely on wire rack. Cut into squares.
Store in airtight container in refrigerator.

Wipe mushrooms clean and gently remove stems; reserve for another purpose. Put caps on baking sheet.
Put basil, olive oil, pine nuts, Parmesan and garlic in food processor; process until finely chopped, scraping down sides of bowl once. Add stock through the feed tube and process until smooth. Add ricotta and process until mixed.

Directions

It's the Great Pumpkin! (Part Two)
It's Halloween! Here are six pumpkin recipes to help you through the day, including Pumpkin Risotto and Pumpkin Cheesecake in Gingersnap Crust. Enjoy!

SPICY PUMPKIN SOUP WITH GREEN CHILE SWIRL

In large bowl, beat eggs slightly; add pumpkin puree, maple syrup, canola oil, vanilla, spices and salt. Beat with mixer until blended thoroughly. Mix in hot milk until blended. There will be about 4 cups of liquid. Pour 1/2 cup flan mixture into each prepared ramekin.

1/4 cup low-fat margarine, melted

Ingredients
1 large onion, chopped
4 tbsp butter
4 cups chicken broth
1 (28oz) can whole tomatoes, undrained
1 tbsp sugar
2 (16oz) cans pumpkin, or 4 cups pureed pumpkin
2 tbsp chopped, fresh parsley
2 tbsp chopped, fresh chives
Directions
Sauté onion in butter until tender. Add broth and simmer 15 minutes.
Process tomatoes in a blender or food processor until smooth. Add tomato and remaining ingredients to broth. Heat to serve.
