Wednesday Recipes

Wednesday - half-way through the work week. Here are six diabetic recipes to help you through the day, including Chocolate-Cherry Parfait (yum!) and Home Style Meat Loaf. Enjoy!

HOME STYLE MEAT LOAF

This recipe begins, “You can’t beat a good meat loaf. Here’s a delicious one that is hearty and satisfying yet has only 7g carbs.”

Ingredients

2 lbs. lean ground beef

1 can (8 1/4 oz) julienne carrots, drained

1 can (13-1/2 oz.) mushrooms, stems and pieces,drained

1 can (2.8 oz.) French Fried onions, crushed

1/2 cup egg substitute

1/2 tsp. black pepper

3 TBSP. Ketchup

Directions

Pre-heat the oven to 350 degress, Coat a 5x9 loaf pan with nonstick spray. In a large bowl combined the ground beef, carrots, mushrooms, onions, egg substitute and the pepper; mix well. Place in the loaf pan and spread the ketchup evenly over the top. Bake for 1-1/4 to 1-1/2 hours. Allow it to set for 5 minutes. Pour off the excess liquid,if any, then slice and serve.

EGGPLANT LASAGNA

This recipe begins, “An extra set of hands from a little helper can shave minutes off the assembly of this Eggplant Lasagna, while getting a youngster excited about digging into a veggie-centric dinner.”

Ingredients

Pam Original No-Stick Cooking Spray

1 cup part-skim ricotta cheese

3/4 cup grated Parmesan cheese

3/4 teaspoon dried Italian seasoning

1 large eggplant (about 1 pound), cut into 1/4-inch thick lengthwise slices

1/4 cup extra virgin olive oil

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1 package (20 ounces) ground turkey

3/4 cup chopped yellow onion

1 tablespoon finely chopped garlic

1 can (14.5 ounces) Hunt's Original Diced Tomatoes, No Salt Added, drained

1/4 cup Hunt's Tomato Paste (or Hunt’s Organic)

1/4 cup thinly sliced fresh basil

1-1/2 cups shredded part-skim mozzarella cheese

Directions

Heat oven to 350F.

Spray 8-by-8-inch glass baking dish with cooking spray.

In small bowl, combine ricotta cheese, Parmesan cheese and Italian seasoning; set aside.

Heat grill pan over medium-high heat. Brush eggplant slices with oil; sprinkle both sides with salt and pepper.

In batches, place eggplant on grill pan. Cook each side 1-2 minutes or until lightly browned and tender. Remove and place on baking sheet lined with paper towels; pat to remove excess moisture.

Spray large skillet with cooking spray; heat over medium-high heat. Add turkey and cook 3 minutes, stirring occasionally. Add onion and garlic; cook 2-3 minutes more or until onion is tender and turkey is crumbled and no longer pink. Drain.

Add drained tomatoes, tomato paste and basil to skillet; stir to combine. Reduce heat and simmer 2 minutes more.

Assemble lasagna by spreading 3/4 cup meat mixture over bottom of dish. Place 3 eggplant slices over meat mixture, top with 3/4 cup meat mixture, half of ricotta cheese mixture and 1/2 cup mozzarella cheese.

Repeat layers, ending with a layer of eggplant slices topped with meat mixture and remaining mozzarella cheese.

Spray underside of aluminum foil with cooking spray; cover dish tightly with foil. Bake 30 minutes. Let stand 10 minutes before serving.

CRANBERRY-ORANGE BREAD PUDDING

Ingredients

2 cups (4 slices) cubed cinnamon bread

1/4 cup dried cranberries

2 cups low-fat (1%) milk

1/2 cup cholesterol-free egg substitute

1 package (4-serving size) vanilla fat-free sugar-free pudding and pie filling mix*

1 teaspoon grated orange peel

1 teaspoon vanilla

1/2 teaspoon ground cinnamon

Directions

Preheat oven to 325°F. Spray 9 (4-ounce) custard cups with nonstick cooking spray.

Divide bread cubes evenly among custard cups; bake 10 minutes. Sprinkle evenly with cranberries.

Combine remaining ingredients in medium bowl. Pour into custard cups over cranberries. Let stand 5 to 10 minutes.

Bake 25 to 30 minutes or until centers are almost set. Let stand 10 minutes before serving.

*Note: Do not use instant pudding and pie filling mix.

Yield: 9 servings. Serving size: 1 bread pudding.

CHOCOLATE-CHERRY PARFAIT

Ingredients

3 oz Neufchatel cream cheese

2 cup cold skim milk

3 oz package Jell-o sugar-free instant chocolate pudding

1 pound fresh bing cherries, pitted, cut in half

Directions

Blend cream cheese with 1/4 cup skim milk, on low speed of electric mixer, until smooth. Add remaining milk and pudding mix. Mix 1 or 2 minutes until smooth and well blended.

Add to 75% of the fresh cherries to 1/2 cup water, and cook until it boils for 1 minute. Remove from heat, drain well.

Alternately spoon pudding and cherries into parfait dishes, ending with pudding.

Garnish the top of each parfait with the remaining cherries.

MEATLOAF

Ingredients

1 1/2 lbs ground beef (ground shoulder roast is good)

1 slice bread (broken or chopped finely)

1 egg

1 small vidalia onions or 1 small type sweet onion, finely chopped

1 teaspoon table salt

1/4 teaspoon black pepper

4 tablespoons ketchup

1/2 – 2/3 cup whole milk or 1/2 – 2/3 cup half-and-half

Sauce

4 tablespoons apple cider vinegar

2 – 4 tablespoons dark brown sugar, packed firm (to taste)

1/2 cup ketchup

Directions

Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.

Smooth out top.

Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.

Bake at 350°F about 1 hour to 1 hour 15 minutes or until done.

BLACK BEAN VEGGIE BURGERS

This recipe begins, “Hearty, tasty and inexpensive, these black bean burgers taste great grilled or baked in the oven.”

Ingredients

1 (16 ounce) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2 inch pieces

1/2 onion, cut into wedges

3 cloves garlic, peeled

1 egg

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon Thai chili sauce or hot sauce

1/2 cup bread crumbs

Directions

If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F, and lightly oil a baking sheet.

In a medium bowl, mash black beans with a fork until thick and pasty.

In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.

In a small bowl, stir together egg, chili powder, cumin, and chili sauce.

Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.

If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.
